These are tasty and topical. Who doesn’t have a summer squash available for dinner? Enjoy with crema and a squeeze of lemon. Love.
1 pound of zucchini, (1 large squash) grated and squeezed through a clean cloth, reserve juice (see picture)
3/4 cup ground walnuts or other nuts
3 Tablespoons potato starch
1 tablespoon flax meal dissolved in 2 tablespoons zucchini juice
1/2 teaspoon salt
1 teaspoon granulated garlic
1/2 teaspoon granulated onion
1/2 teaspoon ground pepper
Grate the zucchini and squeeze it through a clean cloth to extract the juice. Add 2 tablespoons zucchini juice to the flax meal, combine and allow it to bloom.
Meanwhile in a medium bowl add grated zucchini and everything but the soggy flax meal. Mix it all up and then, add the flax mix again and get ready to fry.
Heat a fry pan, when it’s hot add a generous splash of olive oil. Dollop in the batter by tablespoon and flatten with the back of the spoon. Cook over medium high heat until browned, about 1 minute. Flip and cook the the other side.
Squeeze lemons over the warm fritters, drizzle with crema and enjoy!
